Plastering a big wall in one hit

hi, im looking to plaster a big wall in one hit within the up and coming week. the wall is 3m high and 7.5 long and being skimmed over existing old plastered walls. my speed isn't the fastest and I believe I will have to mix up 2 bags to cover the wall for the first coat. does anyone know if there is a good way of slowing down the rate of which the plaster will go off? I will be PVAing the wall the night before and also before I skim the wall. I have done this in the past but still struggled on bit walls.

Just mix small batches of plaster. It's better to manage time to apply it
