Got a bunch of recipes from an old farmhouse Kitchen book:

Dandelion Wine

2.3 litres dandelion flowers (just the heads)
4.5 litres boiling water
1 orange
1 lemon
125g dates
1.3 kg sugar
1 heaped teaspoon yeast nutrient

1. Pick flowers on a sunny day. Pull off green calyx, just use the yellow part. Put in fermenting bucket, pour on boiling water.
Soak for 4 days, stirring daily.
2. Strain and discard flowers. Add sliced fruit and dates, 450g sugar, yeast nutrient and active yeast. Cover with cloth to allow air in. Leave for 7 days, stirring daily.
3. On 3rd day add 450g sugar.
4. On 5th day add rest of sugar.
5. Strain into demi and air-lock.
6. Rack off after 2-3 months, then again 2-3 months later.
